Hello, would you like some of my microwave risotto?

Truth be told, I did not have high expectations for this pre-packed risotto. Ever had one of those frozen microwave Indian curry that comes in a clear plastic container? The ones that the rice always turns out half uncooked in the middle, and soaked with an unusually sweet orange tinge curry that leave a not so pleasant lingering buttery finish?

This is what I thought I was getting myself into, and my excuse is that it was on special, only $3!

I was pleasantly surprised. It turned out to be everything I want in my risotto; It was silkily gooey with a hint of heat and spice, and scattered with visible pieces of pumpkin and spinach (keeping in mind that this a a pre-packed meal). All it took was 3 mins in the microwave, and it was portioned for 2 serves.

No, I did not share it with anyone. 

This made my day! I had pumpkin risotto tonight, basil and tomato risotto tomorrow it is.

Tumeric, chickpea flour, onion, ajwain seed, cumin and silverbeat. Yes! They look like McDonald’s chicken nuggets, of Indian origin, deep fried and borderline morish.

Peas, a stick of celery, an onion, a potato, veg stock, mint, a splash of double cream, season, blend. Done.
